Greystone Pinot Noir 2021 is an organic Waipara Valley Pinot Noir shaped by the limestone-rich Omihi hillsides of North Canterbury. Crushed dark berries lead the nose, lifted by dried herbs and floral notes. The deep, mouth-filling palate is carried by taut tannins and a thread of spice, with a mineral character that adds precision. After a dry autumn encouraged even ripening, the fruit was picked in the cool morning to preserve freshness and acidity.
