Man O’ War Holystone Late Harvest Pinot Gris 2025 is made from hand-harvested fruit from Gorse Laneway Vineyard on Waiheke Island. A long, dry autumn, cool nights and clear days allowed the fruit to develop slowly into a true late harvest style. Aromas of ripe stone fruit, citrus and soft florals lead to a balanced palate, with residual sweetness supported by acidity. The juice was clarified and fermented slowly at cool temperatures in stainless steel, where fermentation stopped naturally.
