El Jimador is a renowned tequila producer based in the heart of Jalisco, Mexico, known for its deep connection to traditional tequila craftsmanship and 100 percent blue Weber agave. Named in honour of the jimadores, the skilled harvesters who hand-select and cut the agave plants, El Jimador celebrates one of the most important figures in tequila production.
Agave is sourced from both the Highlands and Lowlands of Jalisco, offering a balance of aromatic lift, sweetness and earthy structure. Plants are harvested at full maturity to ensure optimal flavour concentration before being slowly cooked, fermented and distilled with precision and respect for tradition.
