Champagne Ayala is one of the historic houses of the Champagne region, founded in 1860 in the Grand Cru village of Aÿ by Edmond de Ayala. Renowned for its pioneering role in producing drier styles of Champagne at a time when sweeter wines dominated, the house built its reputation on purity, finesse and a distinct Chardonnay-driven character. Acquired by the Bollinger family in 2005, Ayala has undergone a modern renaissance, with state-of-the-art facilities and a broad network of over 70 crus supplying its blends. Its signature cuvée, “Brut Majeur,” exemplifies this ethos with bright acidity, precision and minimal dosage.
